I recently popped into the Tower Bridge Collective food hall and, after a bit of browsing, my foodie instincts led me straight to Sapore. If you’re a fan of authentic Italian flavours, this spot is an absolute gem tucked away in the bustle of London. I went for the Tuscan hot focaccia sandwich, and honestly, it was a masterclass in balance. The focaccia itself was beautifully made and the filling was a stellar combination of nduja spread, Tuscan sausage, creamy ricotta, and fresh rocket. Nduja can sometimes be a bit of a bully with its saltiness, but here the cool ricotta acted as the perfect peacekeeper, ensuring every bite was full of flavour without being overpowering. It was rich, savoury, and incredibly satisfying. At just under £15, some might raise an eyebrow at the price for a sandwich, but for the quality of the ingredients I felt it was well worth the spend. You aren’t just getting a quick bite, you’re getting a genuine taste of Tuscany. If you find yourself near Tower Bridge, you have to try this. I’d happily come back again and again for that focaccia alone. Highly recommended!
