About Sajj Shawarma
Sajj bread originated in the Eastern Mediterranean region. It is baked on a domed or flat griddle, known as saj. In ancient times, the saj was heated over an open fire. The dough is flattened by tossing it between the hands and placing it over a Kara (pillow) and is then baked on the saj!
