What is Egyptian cuisine, you ask? It's flavorful, hearty and full of protein -- not the meat kind. Is it vegetarian? Not strictly, but meat and chicken were not (and still aren't) very affordable and so many of our traditional dishes do not include meat...although there is a part of our cuisine that is influenced by the Turks, which is more sophisticated. What they do include is a lot of rice, lentils, beans and vegetables. And when it comes to aromatics, every good dish has got to include onion and garlic, that's for sure.
